For as long as I can remember, I’ve always wanted to be a chef. Cooking comes naturally to me, and I really enjoy it. Show me the kitchen, buy me some groceries, and I can cook you a dinner you won’t soon forget. South Carolina barbecue sauce is one of my favorite recipes, and that is the recipe that started my career. After I graduated from high school, I got a job as a dishwasher in a Popular French restaurant, hoping to climb the ladder to chef. I had no idea at the time how many slippery rungs were in that ladder. In the kitchen of a fine dining, or silver service establishment, the dishwasher, is lower than low and I spent almost a year pearl diving before the sous chef finally gave me my first break, by moving me up to pantry chef’s assistant. His job was salads, soups, and sauces, and my job was slicing vegetables. The pantry chef was a nice guy, and I told him about my barbecue sauce recipe. He just laughed, and told me barbecue sauce was not haute cuisine, but he did show me how to make the sauces and glazes, featured on our menu, and when he was promoted, I became pantry chef. After a year or so as pantry chef, I finally got a chance to go on the line, for one day. The line is where dinners are prepared for the customers, according to the orders submitted by the wait staff. Working the line is where the action is, and where I wanted to be, from the day I started washing dishes. My first day on the line was hectic, but I did a good job, and was just finishing my last order, when the executive chef called me over, and told me to make him some dinner. This was by big break. If my skills impressed him, I was sure of a promotion. I took a deep breath, whipped up some of my barbecue sauce, and glazed a small rack of lamb with it. Most barbecue sauce is red, because it has a tomato base. South Carolina barbecue sauce is mustard based, and a light, creamy yellow. Supposedly the recipe was brought to America by German immigrants, in the 18th century. I delivered chef’s dinner with a shaky hand, but he took one bite, smiled at me, and said, ” I don’t know what this is, but it is superb. You’re on the line kid, congratulations.”

HERE’S WHAT YOU’LL NEED:

Ingredients:

  • 2 lbs Ground Chicken
  • 1 cup Salsa
  • 1/2 cup chopped FRESH Cilantro
  • 1 large Onion chopped
  • 2 cloves minced Garlic
  • 6 cups Chicken Broth
  • 1 lb dry White Beans
  • 2 tbsp chopped Jalapeno peppers
  • 1 -  5 oz can Tomato Paste
  • 1 – 14 oz can Chili or Spicy style Tomatoes
  • 3 tbsp Olive Oil
  • 3 tbsp Butter
  • 1 tbsp each – Cumin, Smoked Paprika, Oregano
  • Salt and Pepper to taste. I used approx. 1 tsp each.

Optional Toppings:

  • Fritos Corn Chips
  • Shredded Cheese
  • Sour Cream

Directions:

  • Cover and soak beans in water overnight.

  • Heat pot over medium heat , then add oil.
  • To hot oil, add garlic and onion and saute till translucent (3 – 5 minutes)

  • add butter and chicken. Stir and saute until chicken is no longer translucent.
  • add Cumin, Paprika, Oregano, Salt and Pepper, and stir continuously for 1 minute.

  • add beans, canned tomatoes, salsa, broth, tomato paste, jalapeno, cilantro, mix well.
  • simmer over med-low heat 1 hour, or until beans are soft.
