Smoked Barbecued Boston Butt

Ingredients

1 Boston Butt

Southern Succor Rub

1/4 cup ground black pepper
1/4 cup paprika
1/4 cup turbinado sugar
2 tablespoons salt
2 teaspoons dry mustard
1 teaspoon cayenne

Southern Sop

remaining southern succor rub
2 cups cider vinegar
1 cup water
3 tablespoons ground black pepper
2 tablespoons salt
1 tablespoon Worcestershire sauce
1 tablespoon paprika
1 tablespoon cayenne

Preparation

The night before you BBQ, combine the rub ingredients in a small bowl. Massage the pork well with about half the rub. Transfer the pork to a plastic bag and refrigerate overnight.

Before you begin to BBQ, remove the pork from the refrigerator. Pat down the butt with another coating of the rub. Let the pork sit at room temperature for about 45 minutes.

Prepare smoker for BBQing, bring the temp to 200F to 220F and allow the temperature to stabilize properly.

Mix the ingredients for the Southern Sop and warm in a sauce pan.

Transfer the pork to the smoker and cook for about 1.5 hours per pound. Mop the pork about once every hour, coating it thoroughly but not excessively. Just enough is the rule here and it will help your sauce go a fair bit further.

Remove the pork form the smoker and allow it to rest for 15 minutes or so. Pull off chunks of the meat, and either shred or chip them as you like it. Make sure each plate that you serve has some of the darker, chewier Mr. Brown along with the lighter internal meat. Serve with your favorite butt sauce, and enjoy with your favorite beverage and selection of BBQ sides and desserts.

OVEN BARBECUED PORK CHOPS

6 trimmed loin pork chops, not thin sliced

3/4 cup catsup

1/3 cup hot water

2 tbsp vinegar

1 tbsp Worcestershire sauce

1 tsp brown sugar

1 tsp Splenda

3 tsp. black pepper

1/2 tsp chili powder

1/2 tsp paprika

Preheat oven to 350 degrees.  Place chops in an oblong baking pan. Mix remaining ingredients together and pour over chops.  Bake, uncovered, for about an hour-until chops are tenderq and cooked through.

NOTE:  This recipe contains a minimal amount of sugar which is counteracted by the protein in the meat.  However, keep this in mind when planning your meal.

THREE CHEESE PASTA SHELLS

1 lb pkg pasta shells

1 egg

1 1/2 cups sour cream

1 1/2 cups small curd cottage cheese

1 lb process American cheese, cubed

2 cups shredded cheddar cheese

Cook shells according to the package directions.  While shells cook, in a blender, combine egg, sour cream, and cottage cheese.  Cover blender jar and process until smooth.  Transfer to a large bowl; add cheeses.  Drain pasta; stir into cheese mixture until evenly coated.  Transfer to a greased shallow 3-quart  baking dish.  Bake, uncovered, at 350 degrees for 15 minutes; stir.  Bake 15 to 20 minutes longer or until bubbly and edges begin to brown.

Serves 8 to 10

Spread over the chicken and BBQ for 25 minutes for the drumsticks or 12-15 minutes for the breasts, turn occasionally and baste with the sauce.

Mix the remaining pasta sauce, garlic and chilli together add the avocado, onion, lemon and season to taste. Toss through the cooked pasta. Place on serving plates, add the chicken, heat the garlic bread and serve.

Barbecued Salmon with Smoky BBQ Sauce and Corn

Ingredients

4 salmon Filets, 6 to 8 oz. each
kosher salt & fresh ground pepper
extra virgin olive oil for searing
½ cup honey-Citrus BBQ Sauce

Ingredients for the salsa

1 cup canned black beans, drained & rinsed
1/4 cup chopped cilantro
1 cup roasted corn, removed from cob
1/2 cup lime juice
1/2 medium red onion, diced
1/4 cup olive oil
1/2 medium red bell pepper, diced
1/2 tablespoon ground cumin
1/2 medium poblano pepper, diced
1/2 tablespoon black pepper
1/2 cup seeded diced tomato
1 tablespoon salt

Ingredients for the smoky barbecue sauce

1/3 cup apple cider vinegar
1 cup ketchup
3 tablespoons brown sugar
1 tablespoon yellow mustard

1 tablespoon molasses
2 tablespoon worcestershire sauce
1 teaspoon liquid smoke
juice of 1 orange
1 teaspoon salt 1/2 tsp dried crushed red pepper
1 tsp hot sauce
1 tsp soy sauce

Directions

To make the salsa

Mix together all ingredients in a large bowl up to and including the cilantro.

In a separate mixing bowl, add the lime juice and spices, and whisk in the olive oil a little at at time.

Add to the salsa and toss gently to combine.

Refrigerate for at least one hour.

To cook the salmon

Preheat oven to 425 degrees.

Pre-heat a skillet over medium heat, (I like to use a good quality non-stick skillet for the first part of this process, but a cast iron skillet or grill pan will also work, or this can also be done on the grill.)
Salt & pepper both sides of the salmon filets and drizzle some olive oil in the pan.

Sear the salmon filets no more than 3 minutes on each side.

Carefully transfer the salmon to a foil or parchment lined sheet pan and brush generously with the barbecue sauce on the top and sides of each filet.

Place the pan in a 425 degree oven for 5 minutes or until the barbecue sauce begins to caramelize.

Serve over a mound of the roasted corn & black bean salsa and garnish with a few sprigs of fresh cilantro.

To make the smoky barbecue sauce

Combine vinegar, liquid smoke, and brown sugar. Stir until sugar is dissolved. Add and combine the rest of ingredients well and refrigerate.

Are Barbecued Meats Healthy or Dangerous?

People used to question the nutritional effects of barbecuing because they were concerned about the fat content of traditional barbecue fare like hot dogs and hamburgers. That concern is valid, but it’s easily avoided by substituting skinless chicken and fish.

Unfortunately, researchers say there is still another concern about the health impact of barbecuing any animal meats; when they are cooked in the intense heat of the barbecue, substances are formed that have been clearly shown to be carcinogens (substances that can start the development of cancer). And these substances develop regardless of whether low-fat or high-fat, red meat or white meat is on the grill.

In a landmark report on diet and cancer risk, the American Institute for Cancer Research (AICR) notes that as meat – red or white – is cooked, natural substances that it contains react under intense heat to form compounds called heterocyclic amines (HCAs) that have been linked with increased cancer risk in some animal studies. The longer the cooking time and higher the temperature, the more these carcinogenic substances formed.

Studies in the Journal of the National Cancer Institute have shown that people who frequently eat heavily browned or very well done meat are three to five times more likely to develop breast, colon and stomach cancer than those who eat it less often. Studies of rodents demonstrated that these HCAs are distributed to mammary (breast) tissue and cause changes in a cell’s genetic material. However, we don’t have proof that this process occurs in people.

Does this mean that if you care about your health you must banish the grill? Not necessarily. Researchers note that how people barbecue affects the risks. For example, marinating meat or poultry even briefly before cooking reduces the amount of HCAs formed by about 96 percent. Partially pre-cooking meat for two minutes in the microwave just before grilling prevents 90 percent of the HCAs normally formed.

Avoid the black char that often forms during grilling, since it is particularly concentrated in cancer-causing substances. Other carcinogens of concern come from the smoke. You can limit the meat’s contact with smoke and decrease this risk if you raise the grill a little higher from the heat and choose leaner meats and trim all visible fat so it can’t drip and cause smoking. Placing food in a foil packet also prevents smoking.

The rest of your meal can reduce the risks of grilling as well. Antioxidant vitamins and phytochemicals in fruits, vegetables and soy foods seem to block some of the damage HCAs do to cells. Studies from Oregon State University demonstrate that substances in tea increase the body’s ability to detoxify and excrete HCA before they do their damage.

Look at the overall balance of your meal. AICR recommends that at any meal, animal protein like meat, poultry and seafood should occupy no more than a third of your plate. And that’s especially true when it’s grilled. By limiting your meat portion, you limit your exposure to HCAs and other carcinogens. And by enjoying a healthy portion of fruits, vegetables and whole grains, you get loads of cancer-fighting, health-promoting nutrients and phytochemicals. If you want to grill some of these veggies, that’s no problem, since the HCA reaction occurs only in foods with animal protein.

Grill Vegetables.  Place on the grill in-season vegetables for example sliced zucchini, greenbeans, asparagas, baby carrot, red onion and sliced egg plant until soft using a knife that’s about 3 to 4 min’s.  Have sliced up tomato uncooked.  Immediately after barbecuing, sprinkle sea salt – pepper for all, fresh thyme to the carrots, oregano as well as sprinkle of chevre parmesan cheese on the egg plant, zucchini tossed with a hint of curry, green beans lightly covered with butter, and asparagas together with citrus zeal.  Serve along with grilled radicchio sprinkled using balsamic vinegar, and also fresh arugula with a hint of lemon juice, olive oil and dash of salt.

Shrimp.  Marinate the shrimp with olive oils, chopped red peppers, lemon zeal juice, basil, salt, and pepper for about twenty or so minutes.  Place on skewers and barbeque grill on both sides for 2-3 mins.  Serve and indulge.

Tips:  While the shrimp is marinating this will become a very good time to put together any other sides.  You actually can barbeque grill these items separately or even use skewers.  Barbeque the vegetables first, next add the shrimp later, the shrimp will grill fast.

Barbecued Dragon Chicken Wings

Barbecued dragon chicken wings are really easy to make, and you eat them with your fingers. My favourite type of barbecue food! To save time I make the sauce for them the night before and keep it in the fridge until it’s needed.

Serves: 6

Preparation: 10 minutes

Cooking time: 25 to 30 minutes

Ingredients

* 18 chicken wings
* Oil for cooking

For the sauce

* 9 fl oz (250ml) of cider vinegar
* 1 tablespoon of coarse sea salt
* 1 teaspoon of freshly ground black pepper
* ! teaspoon of paprika
* I small, roasted red pepper chopped
* freshly ground black pepper to taste
* 9 fl oz (60ml) of vegetable oil
* 2 tablespoons of Worcester sauce
* 2 tablespoons of lemon juice
* 1/2 teaspoon of dried chilli flakes

1. Place all of the ingredients into a blender and mix well together. Pour the sauce into a jug or bottle.

2. Rub the chicken wings with the oil and cook over a hot grill for about 10 to 15 minutes. Stir the sauce and drizzle it over the wings every few minutes.

3. Turn over and repeat for the other side. The sauce will separate and so will need stirring frequently prior to drizzling.

4. Serve your barbecued spicey chicken wings while they’re hot.

Tip: Use a digital thermometer for cooking Barbecue Chicken

A basic digital thermometer is designed to take a temperature reading in about 10 seconds and cannot stay in the food during cooking. Remove the chicken from the heat and slide the thermometer into the thickest part of chicken pieces or into the breast on whole birds. Check the temperature reading.

If the temperature is too low, remove the thermometer and put the chicken back on the heat to finish cooking. If the temperature is right, the chicken is ready to eat.

Pregnant women have become accustomed to seeing long lists of things they should and shouldn’t do while pregnant.  One of the biggest areas for concern lies in the area of foods and how they are prepared.  Even though you normally don’t want to ingest things that are bad for you, and don’t want to make yourself sick due to poor food preparation, there is simply a lot more at stake when you are pregnant.  A lot of women wonder if it is safe to consume barbecued foods when pregnant.

So, are barbecued foods safe to eat while pregnant?  Most medical professionals agree that barbecued food should not be a problem for pregnant women, as long as it is prepared properly.  The biggest risk when barbecuing is that improperly prepared food could contain E Coli, salmonella, and campylobacter.  When you are pregnant, your immune system is not as strong as it normally is, and you are more likely to be affected by even a small amount of bacteria.  Keep in mind that even though these bacteria can make you seriously ill, they will not cross the placental barrier and harm the baby.

One somewhat unusual condition to be aware of that you might encounter if you consume barbecued foods when pregnant is toxoplasmosis, which is a parasite-caused infection that usually feels like a mild flu.  Even though you may not get very sick, this can cause brain damage and eye problems in the unborn baby. Keep in mind that this is fairly rare, however.

If you wish to consume barbecued foods when pregnant, here are some tips for you to follow to ensure that you stay as healthy as possible.  One important thing to keep in mind whenever you are handling raw meat is to make sure you store it separately from other foods. Make sure it stays chilled and covered until you are ready to cook it.  It’s especially important to keep raw meat away from foods that won’t require cooking, like salads. Also make sure that meats are completely thawed before cooking.

If you consume barbecued foods while pregnant, some other ways to make sure that they are safely prepared is to make sure that they are thoroughly cooked.  If you are using charcoal, make sure it is white before cooking.  Cook meat until it is no longer pink in the middle and use a meat thermometer to verify that the meat has reached a temperature of at least 160 F/70 C for at least two minutes in the thickest part. If you consume barbecued foods when pregnant, they can be quite safe, as long as you follow the proper precautions.

So, to answer the question: are barbecued foods safe for a pregnant woman, it seems that, as long as you follow the correct procedures when handling and cooking food, you shouldn’t have any problems.  These rules apply, not just when you consume barbecued foods when pregnant; it’s important to prepare it safely and correctly for you and your family’s health in general.
